PRODUCTION

Close to our producers

A close relationship with our producers and suppliers comes first. We personally oversee every stage, from harvesting and pressing to bottling. Our olives are processed and cold-pressed on the day they are harvested. The result is a healthy, vitamin-rich extra virgin olive oil with an intense flavour.

Our growers pick the olives by hand in a painstaking process and carefully clean them after each harvest. Generations of experience and a finely tuned instinct tell them exactly when to harvest. You can taste that quality in our olive oil.

Some of Tuscany’s most experienced hands have tended olives here in the traditional way since 1880. Without artificial irrigation or pesticides, our growers let nature take its course. Their passion, methods and knowledge are passed down from generation to generation.

STANDARDS

Only the best will do

Laboratory analysis and sensory testing follow every pressing. In three areas, acidity, polyphenol content and peroxide value, our oils outperform the EU standard. These parameters are crucial to an oil’s flavour, quality and keeping properties. Olio Nobile olive oil contains valuable antioxidants with health-promoting, anti-inflammatory and even cancer-preventive effects.

CERTIFICATIONS

Certified quality

Certification is reserved for growers who treat not only their olive trees, blossom and fruit, but also the soil, using exclusively natural methods. The I.G.P. (Indicazione Geografica Protetta) certificate confirms the geographical origin. Our oils are also certified organic.

From the office desk to the olive groves of Tuscany

In 2000, my wife, who has sadly since passed away, and I bought Podere San Domenico in Pomarance, Tuscany. The 250-year-old farmhouse came with nine hectares of land, woodland and 300 olive trees. Within a few months, we discovered that not all olive oils are alike. The first oil we produced ourselves was quite different from the oils we had bought in Switzerland.

We discovered a whole new world of flavour, and have enjoyed this ‘different olive oil’ ever since. Our family, friends and acquaintances looked forward to the Olio San Domenico every year. The few litres we produced were soon given away, used up or sold. Demand far outstripped our small supply. In 2007, I joined forces with local growers, buying their olive oil when it met my strict quality standards and paying them well above the market price. Then as now, most sales were to private customers: people who appreciate good food and know a fine olive oil. Olio Nobile remains a hobby. My two sons, Serge and Gian, help with sales and production. My daughter Nina, Ben and the grandchildren, Philippa and Joshua, visit the farm and enjoy playing in the unspoilt countryside. Tamara, who has been with us from the beginning, is an enormous help with administration.

We want to be among the best in Tuscany. And we want to help local growers improve the quality of their produce and work more sustainably. In Pomarance, where we and our Olio Nobile growers live, noble customers from northern and southern Italy were already ordering olive oil in 1860. That history is documented, and it gives us a tradition to uphold. Come and visit our farm, or plant an olive tree there.

The tranquillity, the view past the cypress trees towards the gentle hills, the scent of fresh herbs and sweet jasmine here on our podere in spring: all of this has always been a welcome counterbalance to my international work and the bustle of the world’s big cities.

It is a pleasure to share these impressions and the qualities of our truly Tuscan olive oil with the world: an oil made by hand, with hard work and a love of nature. Knowing where it comes from and how much care we take each year to produce a distinctive oil, despite increasingly difficult conditions, fills me with pride and gratitude.

Our door is always open to guests from around the world. What could be better than sharing a tavolata with friends who appreciate and enjoy Olio Nobile, and often take it with them to the farthest corners of the earth?

I first discovered the Alta Val di Cecina as a teenager. On outings with local friends and while exploring alone, I soaked up the landscape. Its ancient character fascinated me: the green, unspoilt expanses of oak woodland, old weathered charcoal-burning sites, little streams and rivulets, sometimes flowing, sometimes dry. And the sheepdogs barking as they chased me away from the sheep.

For me, the area still radiates a profound tranquillity that I feel every time I visit our farm in Pomarance. By regularly tending the olive trees on our land and producing a high-quality organic oil, I hope to make my own small contribution to preserving this unique cultural landscape.
